David Hoene

Executive Chef and owner, David Hoene brings over 20 years of expertise and enthusiasm for cooking to all aspects of the Pauline's dining experience. With David's influence, all menus have been infused with fresh ideas, widely varied ingredients, seasonings, and sauces. Chef Hoene embraces the philosophy of using as many local and regional products as possible. Including not only the more popular Vermont specialties, such as maple syrup and apples, but also cranberries, chevre, cheddar, and blue cheeses, rabbit and free-range chicken, local beef and lamb, pastas, and organic produce.
