David Hoene

With over 20 years experience in restaurants and catering, Chef Hoene brings to Pauline’s a wealth of knowledge, ideas and enthusiasm for cooking. With David's influence all menus received an infusion of fresh ideas, with widely varied ingredients, seasonings, and sauces. He has embraced and expanded upon Robert’s philosophy of using as many local and regional products as possible. Including not only the more popular Vermont specialties such as maple syrup and apples, but also cranberries, chevre, cheddar, and blue cheeses, rabbit and free-range chicken, local beef and lamb, pastas, and organic produce.
